The Perfect Thanksgiving Turkey

If you have been searching for the perfect turkey recipe for the upcoming Thanksgiving holiday – look no further! Marjorie’s chef husband and meat connoisseur, Philippe, has been kind enough to share his favorite recipe with us. Below you will find the ingredients and step-by-step instructions that will have everyone in your family begging for more!

Turkey Brine Ingredients:

  • 6 quarts of water
  • 4 bay leaves
  • 2 sliced onions
  • 4 garlic cloves – smashed
  • 1 ½ cups of fine sea salt
  • ¾ cup of brown sugar
  • Zest of 5 oranges
  • Juice of 5 oranges

Brining Instructions:

  1. Wash oranges under hot water
  2. Zest the oranges with a microplane or a zester (A microplane can be found in any cooking store or some grocery stores)
  3. Juice the oranges
  4. Warm the orange juice with all the ingredients above except the cold water
  5. Let the salt and the sugar melt
  6. Add liquid to the 6 quarts of cold water and mix
  7. Place the turkey in a stock pot or brining bag
  8. Pour the liquid to cover the turkey
  9. Refrigerate for 6-12 hours

Cooking Instructions:

  1. Preheat oven to 375° F
  2. Take turkey out of the brine and pat it dry inside and out
  3. Season the cavity with salt and pepper (1 ½ T salt, 1 T black pepper)
  4. Put turkey in roasting pan
  5. Brush melted butter on the outside
  6. Sprinkle salt and pepper on turkey (1 ½ t salt, 1 t black pepper)
  7. Pour 1 quart of turkey or chicken stock in roasting pan
  8. Pass the brine and add the solid ingredients to the roasting pan
  9. Put turkey in the oven on lower rack
  10. Turn oven down to 325° F after 30 minutes
  11. Baste the bird with pan juices
  12. Baste every 30 minutes or so
  13. Put the meat thermometer into the thickest part of the thigh (avoid bone) Inside temperature should be 150° F (turkey temperature will still rise when turkey is resting)
  14. When turkey is at 150° F, take it out of the oven and cover it with foil for 30 minutes

Notes: During the cooking process, make sure you have enough turkey stock in the roasting pan.

Gravy Ingredients:

  • 1 stick of butter (4 ounces)
  • 1/3 cup of flour (mix butter and flour to make roux)
  • 3 cups of passed drippings liquid
  • Salt and pepper to taste

Gravy Instructions:

  1. Pass the liquid from roasting pan into strainer
  2. Keep the liquid and discard the solids
  3. Pour the liquid into a fat separator
  4. Let the grease come up and keep the liquid
  5. Mix the roux (flour and butter) and then the liquid
  6. Bring to a boil while mixing
  7. Season to taste
